Mash-Out Chocolate Chip Cookies

Looking for ways to reuse spent grain? These chocolate chip cookies were an adaptation of the normal chocolate chip recipe my wife and I like to make. We try to use whole wheat, flaked grains, etc anyway when we bake and spent grains seemed like the perfect addition. If you don't want to use, or don't have, whole wheat flour, these will come out a bit more like "normal" chocolate chip cookies if you use all-purpose. Here's what we did.
Ingredients:
- 1 cup butter, softened
- 2 cups whole wheat flour
- 2/3 cup white sugar
- 2 eggs
- 2/3 cup brown sugar, packed
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chocolate chips
- 1 cup spent grain
- 1 tsp vanilla extract
Directions:
- Preheat oven to 350 degrees F (175 degrees C).
- In large mixing bowl, cream together the butter, white sugar, and brown sugar until smooth, and vanilla.
- Beat in the eggs one at a time.
- In small bowl mix flour, baking soda, salt and grain.
- Gradually mix flour/grain mix into large bowl.
- Stir in chocolate chips.
- Drop large spoonfuls onto un
greased pans. - Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.
Notes:
Depending on the amount of water left in grain you may need to add more flour to get the right consistency. If you are a nut guy (or gal) go ahead and add some crushed walnuts or pecans when mixing in the chocolate chips. Also, my wife and I are partial to dark chocolate so that's what we used for our chocolate chips. Use whatever makes you happy. Enjoy!
